Skinnygirl love...

If you haven't picked up on it yet (HELLO?!)...I love love love Bethenny Frankel! Everything from her witty remarks, to her fabulous recipes, to her book Naturally Thin that has helped so many people have that AHA! moment to get what eating to stay naturally thin is all about. And don't get me started on her workout DVD...LOVE Body by Bethenny!

I've been doing the yoga video for a few months now and can't get enough, it has been the perfect workout video since it's been too cold to run outside (and I don't do treadmills.) Plus now that it's getting warm enough to run outside it will be a great way to mix things up on days when it's raining or my muscles need a good stretch. And for someone that has always felt like I didn't get a workout unless I did intense cardio, this video has really surprised me! I have always loved yoga, but used to think of it as more something to do on days when I didn't have the energy to get a "real" workout in. Body by Bethenny has taught me otherwise, I can tell I am getting a great workout in and feel wonderful when I'm done...also it has really help to tone my muscles (yay!)

As seen in one of my previous posts we've been making Skinnygirl margaritas at home. I love making things from her book Skinnygirl Dish, which provides low-fat/healthier alternatives to regular recipes. Easily our household fav of her recipes is the lowfat "mock-a-mole"...so much so that we don't even order guacamole out anymore because as Dave puts it "why would I pay for guacamole when my wife makes it so much better"- awwww.

...And for that sweet comment I have Bethenny to thank, her book is all about empowering those who never have thought of themselves as cooks to realize it's not scary to get in there and try new recipes. (I've always enjoyed baking, but cooking is something I never had practice with.) The best part about the book is it teaches those of us who are typically timid in the kitchen that it's OK to not follow recipes exactly and if you don't have an ingredient don't stress, use what you have!

So without further ado here is her recipe for low fat mock-a-mole the way that I make it (the original recipe is here)...

Skinny Guacamole by Home is with You

Ingredients:
  -2 avocados, peeled and pitted
  -1/4 cup chopped fresh tomato
  -1 tablespoon chopped red onion
  -2 tablespoons chopped fresh parsley
  -2 teaspoons fresh lime juice (about half a lime squeezed)
  -1 teaspoon low sodium soy sauce
  -1 teaspoon garlic salt
  -1/2 teaspoon black pepper
  -3/4 teaspoon Tabasco sauce


I combine all of the ingredients in our Ninja (food processor would work also) and blend until smooth...enjoy! I have been doubling the recipe lately because Dave and I love it so much, that way we can have it all week :)

Wednesday Wishes {1} ...

I recently stumbled upon Brooke's blog Bright Wishes and it happened to be a Wednesday...she has a link-up called Wednesday Wishes and I thought I'd try it out this week!

ONE~ I would love a cute pair of wedges for this spring/summer...



TWO~ I want to learn how to bake pies...my Dad and grandma have just planted all kinds of fruit trees at the lakehouse and this summer I would love to be able to use some of them to make pies as pretty as this...

THREE~  SUNSHINE!!! It's been dark and cloudy here all week and I could really use some warm sunshine...it's almost May for goodness sakes! 




FOUR~ for the Bridal shower I'm throwing on Sunday for my BFF to go well

FIVE~ to start growing some vegetables and herbs, especially if I can find some cute herb stakes like these...
