What's for dinner {12}...

What's for Dinner // Home is with You

Monday Dave and I had barbeque "chkn" nuggets and butternut squash. If you are vegetarian/vegan or just want a meatless meal, we highly recommend these! They are so delicious. The brand is Morningstar and they can be found at most grocery stores, we got ours at Target, of course :)

Tuesday Dave and I had tuna (with a little mustard) and cheese on a whole wheat bagel. Gotta love the toaster oven...delicious every time.

Wednesday night we went out to dinner with my Dad and Grandma for my Grandma's birthday. Afterwards we just couldn't help but indulge in one of the pumpkin cookies my Mom gave us for our trip...thanks Mom!

Now let's see what you all have been up to in the kitchen!

What's for dinner {11}...improve style...

I don't know if you guys have picked up on it yet, but we love pasta around here. So what to do when you start to boil what's left of a bag of whole wheat pasta and it doesn't expand as much as you were expecting...as in, there's not much pasta to eat? Why not throw in what you have left of another kind of whole wheat pasta? That's what we did last night. Pasta...improve style.

Add in a piece of homemade whole wheat garlic bread and a glass of red wine...perfecto :)

What's for dinner {10}...

So everyone needs a break at some point, and this week was Dave and I's break from cooking. This week we've enjoyed just making things that we could stick in the oven or cook on the stove that didn't require ingredients or a recipe. Then last night I got this text from Dave...

What's for Dinner // Home is with You

So I got all purdy and Dave took me to one of our favorite Mexican restaurants in town. Guess our homemade Mexican on Saturday just didn't satisfy the urge...truth be told, I could eat Mexican every day.

...it was SO good! After dinner we headed home for Dexter and some cuddling on the couch :) Hopefully you all were better about cooking this week, can't wait to see what you all have been making!

What's for dinner {8} // Tofu Stir Fry Recipe

This week Dave and I made a lot of yummy food. Like I said yesterday, the cooler weather has led us to crave certain comfort foods. If you follow me on instagram you have probably seen a bunch of my food pics. My favorite thing we made this week though was the tofu stir fry Dave made us, nutritious and delicious...and so easy too!

What's for dinner {7} // Homemade Pizza

This week Dave and I have been in food heaven since we got to make a trip to Trader Joe's this past weekend and were able to stock up on all our favorites. One of the things that we always get when we have a Trader Joe's nearby is their ready to bake whole wheat pizza dough. Even though we know how to make a very yummy whole wheat pizza dough from scratch, this is just so easy! (But if you are like us and don't have a Trader Joe's nearby try the link for our pizza dough!)

So here's what we did with our pizza dough this time around...

Heat the sauce. Add spices/herbs. Roll the dough. Add toppings. Bake!

I won't show any "after" pictures because it turned out looking like a hot mess. We had a tiny huge problem getting the beautiful creation to our pizza stone. But hey, we had a good laugh about it and it still tasted fantastic. I recommend hot sauce and honey for dipping. Not at the same time though...

What's for dinner {6}...

This week Dave and I had more diverse ingredients to work with thanks to the vendors at the Old Town Farmer's Market on Saturday. We made some mind blowing sandwiches this week with some of our free goodies...

Sandwich 1~

Sandwich 2~

Sandwich 1 was ciabatta bread, lettuce, portabella mushroom, provolone cheese, tomatoes, a spicy pepper (since it was given to us, no idea what kind), and vegan ranch (we like Annie's).

Sandwich 2 was ciabatta bread, provolone, lettuce, green and yellow bell peppers, tomato, and vegan caesar dressing.

...I also teased you all with a picture of our dinner on Monday night. This pasta was to die for!

Pasta was whole wheat rigatoni. The sauce is made of a can of diced tomatoes, can of tomato paste, few diced black olives, two tablespoons low fat ricotta cheese, crushed red peppers, garlic, and cayenne pepper.

We also made some garlic bread with some slices of french bread, extra virgin olive oil spray, and garlic salt. Baked in the oven at 395 for about 2 minutes.

Enjoy :) Can't wait to see what you all are linking up with this week!

What's for dinner {4} // Vegetarian Tamale Pie Recipe.

Monday I made Dave and I this dish I found on Pinterest. (If you're on there add me!) These vegetable tamale pies were amazing and super cheap to make, I will definitely be making them again. For dinner we put some of it on lettuce cups and ate them as wraps. My mouth is watering just thinking about it. I made a few changes to the recipe so I will share how I made it.

Ingredients~
   -1 cup cornmeal
   -sea salt
   -1 can black beans
   -1 can diced tomatoes
   -1/2 c salsa
   -2 tsp cumin
   -1/4 tsp cayenne
   -1 tsp oregano
   -1/4 cup jalapeno slices
   -Mexican cheese

1. Bring 4 c water to boil in medium sauce pan. Stir in cornmeal slowly. Continue to stir until it begins to thicken (about 2 minutes). Add 1 tsp sea salt. Reduce heat to low and stir occasionally for about 15 minutes.

2. Spread a layer of the cornmeal mix onto the bottom of your dish. I used two circular dishes about . Preheat oven to 350.

3. Drain the tomatoes and beans. In mixing bowl, mash beans with a spoon (I find that's easier than a fork), I did it until they were about half mashed and some were still whole beans. Add tomatoes, salsa, cumin, cayenne, oregano, jalapenos, and 1/2 tsp sea salt. Mix.

4. Pour mixture in the dish(es). Top each dish with cheese. Bake about 25 minutes.

What's For Dinner // Home is with You

Let's be honest, after traveling to Texas for most of last week we didn't have much in our cupboards this week. But last night we had an amazing meal that is super cheap to make thanks to Dave...

We heated up two cans of diced tomatoes and green chilies with half a can of artichokes (diced) and half a can of black olives (diced.) Luckily we like spicy food because he wasn't thinking about the green chilies being in there and added crushed red peppers, parsley, and Italian seasoning...perfect.

We boiled the whole wheat bow tie pasta with a dash of extra virgin olive oil and the spices listed above. When everything was finished we mixed them all together and added a little shredded Parmesan cheese (shaky cheese as I like to call it) and a couple of whole black olives. It was deeelicious!

Monday it was my bestie's Mom's birthday and since my Mom and I are doing zumba with her on Monday's we thought it would be fun to bring her something. My Mom brought her some wine and I made Bethenny's skinnygirl chocolate cake with peanut butter glaze for the first time. I only had a bite but I must say it was amazing. I will definitely be making that one again!

That night we cheated. It had been a long day and I had a coupon so we went to On the Border for the first time in FOREVER. The food was alright, but the huge margaritas were bomb.

Tuesday night I made one of Giada's soups from Target. She is my fav Food Network cook so we tried some of her stuff when it came out and loved it. This soup is wonderful, we just added some veggie broth and spinach and it was delicious and filling. Dave made some garlic bread (wheat bread with Parmesan cheese and garlic salt, baked) to go with it and it was great...we also got some new wine to try and it is a must try. My Mom loves Moscato, but sometimes it's too sweet for us. The Yellowtail version is just the right amount of sweet though...perfection...

Wednesday we just made some frozen pizza. We tried Digorno's thin crust cheese pizza for a change...pretty dang good. The end.

Can't wait to see what you all made, hopefully you all were more creative than we were this week!

Don't forget to add a button! :)
