Favorite Fall Recipes.

Fall is the best time to bake and cook, thanks to the temps cooling down and making us want to spend a bit more time inside (and not feeling like we're going to melt when we turn on the oven). Plus, the recipes we tend to make in the Fall are always my favorites, how could you not love a time where it's socially acceptable to throw some pumpkin in all of your recipes and comfort food is beginning to make a comeback.

I've shared a lot of Fall recipes since I've been writing in this space, so today I thought I'd compile a few of my favorites, enjoy!

I know it's not Fall everywhere, but here it definitely is. We have the gorgeous colors all around, cooler temps, and the need for snugly clothes...what more could a girl want? My walk in the forest today (or yesterday, since for most of you it's already Tuesday) inspired me to write down a few of the reasons why Fall is my favorite time of year...

These are a few of my favorite things: Fall edition.

The official first day of Fall is in a few days and it is finally starting to feel a bit fallish here in south Texas...at least to us. At this point anything under 100 feels amazing. But I thought I'd share a few of my favorite things to enjoy once the cooler temps hit...

Most of you know I've been burning my Fall scented candles for awhile now, totally in denial that it was still blazing outside. I didn't care, it made me happy.

I almost got the book before the movie, but I'm the weirdo who likes to see the movie and then read the book...so I waited. But there is nothing better than curling up to a good book on a cool evening with the windows open.

Dave and I have been having fun trying all the Oktoberfest, harvest, and pumpkin beers out right now. This was one of our favorites so far.

What's for dinner {9}...Fall style!

Last night Dave and I had the perfect fall meal...Halloween chili! Dave cooked this for us last night and it was fall perfection. The best comfort food for chilly (ha. ha.) days...

Ingredients~

Heat two cans of the organic fire roasted tomatoes and one can of tomato puree. Add spices and half an onion chopped. Cook pasta in separate bowl. At the same time add beans to tomato mix. Once the pasta is finished, add it to the tomato/beans mixture and heat boca crumbles...

Mix all together and top with cheese...

So good I tell you, I might have eaten just a liiiittle too much. PS~ the pasta can be found at World Market!
For desert I made my favorite my favorite fall treat from Superfoods. If you haven't checked out this book I highly recommend it! It was the first thing that really changed my way of thinking and got me to check the labels of the foods I buy. Here's my version of the pumpkin pudding recipe in that book...

Ingredients~

One 15oz can Libby's 100% pure pumpkin
1 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp sea salt
One 12oz can nonfat evaporated milk
1/2 cup cane sugar
1 banana

Mix sugar, cinnamon, and pumpkin pie spice in a small bowl. In a large bowl mash the banana. Add the pumpkin and sugar-spice mix to the large bowl.

Gradually stir in evaporated milk.

Pour into a shallow dish and bake at 350 for 40 minutes (my dish wasn't shallow so I did 50 min). The center should still be wiggly. Cool at room temp or refrigerate for later.
