Monday I made Dave and I this dish I found on Pinterest. (If you're on there add me!) These vegetable tamale pies were amazing and super cheap to make, I will definitely be making them again. For dinner we put some of it on lettuce cups and ate them as wraps. My mouth is watering just thinking about it. I made a few changes to the recipe so I will share how I made it.
Ingredients~
-1 cup cornmeal
-sea salt
-1 can black beans
-1 can diced tomatoes
-1/2 c salsa
-2 tsp cumin
-1/4 tsp cayenne
-1 tsp oregano
-1/4 cup jalapeno slices
-Mexican cheese
1. Bring 4 c water to boil in medium sauce pan. Stir in cornmeal slowly. Continue to stir until it begins to thicken (about 2 minutes). Add 1 tsp sea salt. Reduce heat to low and stir occasionally for about 15 minutes.
2. Spread a layer of the cornmeal mix onto the bottom of your dish. I used two circular dishes about . Preheat oven to 350.
3. Drain the tomatoes and beans. In mixing bowl, mash beans with a spoon (I find that's easier than a fork), I did it until they were about half mashed and some were still whole beans. Add tomatoes, salsa, cumin, cayenne, oregano, jalapenos, and 1/2 tsp sea salt. Mix.
4. Pour mixture in the dish(es). Top each dish with cheese. Bake about 25 minutes.
