Red hot chili nachos Recipe

Last night Dave and I made these and they were just too good not to share! I know nachos are easy, but sometimes a little inspiration for a recipe goes a long way. I'm going to warn you, these are SPICY...don't say you weren't warned. But of course you can always tone it down a bit to your comfort level. Me? I'll eat spicy food until tears are streaming down my face and my nose is running and I'm breathing fire, but that's just me.

Ingredients~
   Chips (we used blue corn chips with flaxseed, from Target)
   Cheese (right now we are loving authentic Mexican cheese, Kraft)
   Jalapenos, as many as you like, obviously I like a lot
   1 can of diced tomatoes
   Chili powder, to taste, we used just a little 

Directions~
   Pre-heat oven to 400 degrees. Lay chips on baking sheet, spread out the jalapenos on the chips. Cover with cheese. Spread out the tomatoes. Sprinkle with chili powder...

Bake for about 2 minutes and enjoy!

And in case anyone was wondering, Dave picked off a few of his jalapenos and said I had to eat them, of course I knew I didn't HAVE to...but I wanted to. And so I ended up drinking 1 1/2 huge water bottles to try and end the pain. Also for the record, I know water doesn't stop the burning, but I didn't want any more chips mmmkay? 

But seriously, these nachos were amazing, even better than any I've ever had in a restaurant.
