What's for dinner {6}...

This week Dave and I had more diverse ingredients to work with thanks to the vendors at the Old Town Farmer's Market on Saturday. We made some mind blowing sandwiches this week with some of our free goodies...

Sandwich 1 was ciabatta bread, lettuce, portabella mushroom, provolone cheese, tomatoes, a spicy pepper (since it was given to us, no idea what kind), and vegan ranch (we like Annie's).

Sandwich 2 was ciabatta bread, provolone, lettuce, green and yellow bell peppers, tomato, and vegan caesar dressing.

...I also teased you all with a picture of our dinner on Monday night. This pasta was to die for!

Pasta was whole wheat rigatoni. The sauce is made of a can of diced tomatoes, can of tomato paste, few diced black olives, two tablespoons low fat ricotta cheese, crushed red peppers, garlic, and cayenne pepper.

We also made some garlic bread with some slices of french bread, extra virgin olive oil spray, and garlic salt. Baked in the oven at 395 for about 2 minutes.
