Steppin' Out Saturday {21}...
Yesterday Dave and I worked...all day. By 5 I was getting pretty antsy and was dying to get out of the house, so we stepped out to Target. Yes, Target. Haha we love going there and we were really wanting to go out to eat for Mexican food (our fav), but to save money we decided to make a Target run instead...

These tacos turned out soooo good! I know a lot of you asked after my post on Thursday if we use Boca meat for things other than chili and the answer is yes. We love the boca crumbles and we use them for many things. They are perfect for taco night! Just cook it with a little chili powder, cayenne pepper, and garlic salt.
Oh and I normally don't ever drink pop, but I'd been wanting to try the throwback kind with natural sugar and no high fructose corn syrup. Tastes great, but still is a special treat because even though it's better ingredients it still has a lot of sugar.

What's for dinner {9}...Fall style!
Last night Dave and I had the perfect fall meal...Halloween chili! Dave cooked this for us last night and it was fall perfection. The best comfort food for chilly (ha. ha.) days...
Ingredients~
Heat two cans of the organic fire roasted tomatoes and one can of tomato puree. Add spices and half an onion chopped. Cook pasta in separate bowl. At the same time add beans to tomato mix. Once the pasta is finished, add it to the tomato/beans mixture and heat boca crumbles...

Mix all together and top with cheese...
So good I tell you, I might have eaten just a liiiittle too much. PS~ the pasta can be found at World Market!
For desert I made my favorite my favorite fall treat from Superfoods. If you haven't checked out this book I highly recommend it! It was the first thing that really changed my way of thinking and got me to check the labels of the foods I buy. Here's my version of the pumpkin pudding recipe in that book...
Ingredients~
One 15oz can Libby's 100% pure pumpkin
1 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp sea salt
One 12oz can nonfat evaporated milk
1/2 cup cane sugar
1 banana
Mix sugar, cinnamon, and pumpkin pie spice in a small bowl. In a large bowl mash the banana. Add the pumpkin and sugar-spice mix to the large bowl.
Gradually stir in evaporated milk.
Pour into a shallow dish and bake at 350 for 40 minutes (my dish wasn't shallow so I did 50 min). The center should still be wiggly. Cool at room temp or refrigerate for later.

Lately...and a giveaway!
Lately... I've been hooked on having a whole wheat bagel for breakfast...with either cream cheese or cucumber sauce and tomatoes on top. Don't know where this came from since I've never made this before but for some reason this last week it has hit the spot. Big time.

Be you.
Why is it (especially as women) that we spend so much time comparing ourselves to someone else? Why do we look at images of other women (or men) and compare ourselves so harshly? It happens all the time we wish we were taller, shorter, blonde, brunette, straight haired, curly haired, etc...
We waste so much time wishing we were smarter, richer, thinner, funnier...it's exhausting. And why do we do it?
We are all gorgeous creatures created perfectly just the way we are. So why would we wish to change a thing? Instead, we should spend that time and energy focusing on the things we do have....
If only we spent that time furthering the talents we have been given...it could really change the world. We are all so talented in our own ways, why would we not want to make the best of them?

Halloween Decor.
Normally Halloween is one of my favorite holidays. I LOVE scary movies, candy, and decorating in general...so what's not to love? This year I've had a hard time getting in the Halloween mood or even feeling like it's coming up...so what gives?
It's probably due to the fact that this has been the fastest year of my life. I feel like everything has FLOWN by this year! I can't keep up. I am in complete shock and denial that Halloween is merely a week away and before we know it Thanksgiving and Christmas. How? I just don't know...
But to help get me in the mood and back up to speed with this year here are some Halloween pics of how I would decorate our place if time, money, and all of that good stuff was on my side...

What's for dinner {8} // Tofu Stir Fry Recipe
This week Dave and I made a lot of yummy food. Like I said yesterday, the cooler weather has led us to crave certain comfort foods. If you follow me on instagram you have probably seen a bunch of my food pics. My favorite thing we made this week though was the tofu stir fry Dave made us, nutritious and delicious...and so easy too!
Ingredients~
Just heat the rice. Cook the tofu and broccoli. Add the rice and some soy sauce...and voila!
We ate ours with a little chili sauce on top...enjoy!

Things I am loving right now...
This cooler weather!
It has been ideal temps (at least for Dave and I) lately here in Kansas...
we are loving it! Fall has definitely arrived and we can't get enough.
The cooler temps mean more snuggling and who can say no to that?
Warm drinks.
With the cooler temps, I can now drink my teas warm instead of cold.
It's beyond fabulous...
And last, but certainly not least.

Big news!
As most of you know, my husband Dave and I have been contemplating moving for awhile now. We have been praying, researching, asking others, putting in countless discussions, and praying some more as to where we thought would be the best move for Dave's music, and for us as a family, would be.
We have finally come to a decision on where we will be moving to in January...
Austin, Texas! We are both very excited. Both of us have grown up loving Texas as a state and we can't wait to live there together. I had family that lived in Dallas growing up and we visited them often. Dave has lived all over Texas throughout his adult life. Texas feels like home...to both of us. :)
Dave will be playing at Opening Bell again in Dallas November 19th! Can't wait to meet more of our internet friends and see some old friends. If you're in Dallas, we hope to see you there!

Steppin' Out Saturday {19}...
Yesterday Dave and I took it easy for the most part. We let ourselves sleep in. Cleaned up around the house. Went for a run. Dave made us some delicious tomato and cheese sandwiches (jalapeno on mine). We watched some One Tree Hill (we're currently doing a marathon of all the oldies because Dave never saw them- he's addicted now by the way). And then we headed out for a Barnes and Noble date...one of my favorite kind of dates :) Made me miss Borders, but I guess I'll have to get used to it...perfect Saturday if you ask me...
Hope you all have had a wonderful weekend and are now having a nice relaxing Sunday...we have a lot to do today at the Owens household, but all exciting things! Love you all ~Mal
