Thanksgiving Recipes.

Today I'm sharing with you two recipes that would be perfect to bring and share with your families for Thanksgiving this year. As you know, on my blog I try to take recipes and make them healthy while still being delicious, the first recipe is exactly that…but sometimes you just have to splurge and that's what the second recipe is, a treat. Hope you enjoy them both!

Spicy Cornbread:
1 cup cornmeal
1 cup whole wheat flour
3 1/2 tsp baking powder
1 tsp sea salt
1 1/2 tsp cane sugar
1 egg, beaten
1/4 cup Country Crock
1 cup almond milk
3/4 cup shredded Mexican cheese
Crushed red peppers (as much or as little as you'd like, I like mine spicy)

 Preheat your oven to 425. Mix the dry ingredients: cornmeal, flour, baking powder, sea salt, and sugar in a large bowl and combine well. Make a hole in the dry ingredients and place the beaten egg and Country Crock in the center. Using a hand mixer, mix well, stirring from the center.

Add the almond milk slowly while still mixing. Fold in the cheese and red peppers. Pour your batter into an oiled (I use extra virgin olive oil) 9 inch baking dish and bake for 20 minutes. This is delicious with chili, soup, and/or topped with cream cheese. Perfect for a cold day!


This next recipe is a bit of a splurge, but if you just use a bit at a time it’s fine! You have to treat yourself every now and then.

Honey Cinnamon Spread:
1/2 cup honey
1/2 cup powdered sugar
1/2 cup Country Crock
1 tsp cinnamon
1 tsp pumpkin spice (optional)

Mix everything together well. I recommend using a handheld mixer to get it mixed completely and to the right consistency. This recipe would also make a great hostess gift!
