10 med potatoes
1 green, yellow and red pepper, diced
3 stalks celery, diced
1/2 container of mushrooms, sliced
1 can cream of mushroom
2 cans cheddar cheese soup
Peel and bring potatoes to a boil for 10 minutes, let cool by running cold water over potatoes. Slice potatoes and layer in greased 9x13 pan. Mix together soups and veggies in separate bowl. Spread veggie mixture over potatoes. Cook at 350 for 30 minutes covered and then uncover and cook for 30 minutes at the same temperature. Spoon into bowls and season with garlic salt and lemon pepper to taste.
The next day, as is typical for me, I was wanting something spicier...so I just threw a few jalapenos in my bowl before heating it up and it was fabulous!
