Cheesy Potato Bake Recipe.

If you guys remember our stop in Kentucky on our trip home from Thanksgiving...Ski's wife Erika made us this amazing dish and we couldn't wait to come home and try it again! Erika was kind enough to email Dave the recipe and this is how we made it...

Cheesy Potato Bake Recipe // Home is with You

10 med potatoes
1 green, yellow and red pepper, diced
3 stalks celery, diced
1/2 container of mushrooms, sliced
1 can cream of mushroom
2 cans cheddar cheese soup
Lemon pepper
Garlic salt

Peel and bring potatoes to a boil for 10 minutes, let cool by running cold water over potatoes. Slice potatoes and layer in greased 9x13 pan. Mix together soups and veggies in separate bowl. Spread veggie mixture over potatoes. Cook at 350 for 30 minutes covered and then uncover and cook for 30 minutes at the same temperature. Spoon into bowls and season with garlic salt and lemon pepper to taste.

The next day, as is typical for me, I was wanting something spicier...so I just threw a few jalapenos in my bowl before heating it up and it was fabulous!

  3. I love potatoes more than anything!! :) And cheese :) But the peppers...eeek! I could take those out though!
