I found this recipe on Pinterest and knew I had to try it and make my own version. My version is high in protein and fiber so you can enjoy them without the guilt!
Ingredients~
1 3/4 c oats
3 egg whites
3/4 cup chocolate hemp protein (I used Trader Joe's brand)
1 banana
1 tsp. vanilla extract
1/2 cup plain organic yogurt (or Greek yogurt, I used Stonyfield fat free organic)
1 1/2 Tbsp vinegar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp sea salt
1 cup hot water
1 cup cane sugar (or sugar substitute)
1/2 cup dark chocolate chips (we like Ghirardelli)
Preheat oven to 350 degrees.
In a blender (or food processor- I used my Ninja) mix all of the ingredients, except chocolate chips, together. Blend until the mixture is smooth.
Put 1/2 of your chocolate chips in the blender and stir up the mixture (set the rest aside). Spray your muffin tin with cooking spray (well!) and pour mixture in.
Place muffins in the oven for 10 minutes. Then remove muffins (leave the oven on), and sprinkle the other half of the chocolate chips on top of the muffins. Place the muffins back into the oven and bake for an another 5-10 minutes.
I had planned to take the muffins out of the tin to take a pretty final picture for you, but I didn't spray the tin well enough and they didn't come out of the pan easily...so don't make my mistake! We didn't care though, they are delicious (and healthy!) so we've been forking them out of the tin, hehe.
